Total hours \u2013 9.5hrs&gt; 9hrs cook \u2013 looking for Internal of<\/h1>\n<h1>205f&gt; (95c) or butter feel is reached \u2013 min 60min Rest<\/h1>\n<p>&nbsp;<\/p>\n<p><strong>Cooking Temp of 275-300f<\/strong> (135c-148c)<\/p>\n<p><strong>\u00a0<\/strong><\/p>\n<p>Place<strong> Pork Shoulder in a foil tray <\/strong>and<strong> rub <\/strong>with your favorite <strong>BBQ Rub Mix<\/strong> until <strong>Completely Covered (<\/strong>we like a little sweet rub with a little heat kick at the end<strong>, Sweet Rub \u2018O Mine <\/strong>from<strong> Barbeques Galore <\/strong>is<strong> Peeerrfect!!<\/strong><\/p>\n<p><strong>Let rub rest and soak into meat for 30mins while preparing Smoker<\/strong><\/p>\n<p>Place <strong>Directly on either Rack &#8211;<\/strong> <strong>Spritz<\/strong> after first hour, every hour&gt; with <strong>Apple juice <\/strong>\u2026<\/p>\n<p>Take to <strong>internal temp of 160-170f<\/strong> (71-76C) <strong>or<\/strong> when <strong>happy with color<\/strong> Before wrapping<\/p>\n<p><strong>Wrap<\/strong> tight in <strong>Foil<\/strong> with <strong>a mix of Apple juice, butter and brown sugar inside wrap<\/strong><\/p>\n<p><strong>Cook<\/strong> further until <strong>Internal temp<\/strong> reaches <strong>205f&gt;<\/strong> (95c) or probing like butter<\/p>\n<p>Remove Butt from Smoker \u2013 <strong>Wrap tight <\/strong>in<strong> two layers of Heavy Foil with remaining juices (<\/strong>don\u2019t be afraid to add more Apple juice if you feel not enough juices remain, meat will soak any up beautifully for pulling!<strong>) being sure no leaks <\/strong>then wrap in<strong> towel<\/strong>, and <strong>place in<\/strong> <strong>Foam Esky <\/strong>&#8211; <strong>Rest for minimum of 60mins or up to 5 hours prior to serving<\/strong><\/p>\n<p><strong>Pour off some juices and mix with your favourite BBQ sauce (we particularly like a Sweet Baby Rays Hickory Brown Sugar, or Stubbs Hickory and Bourbon <\/strong>again from Barbeques Galore) pull meat in the remaining <strong>juices, mix in sauce if desire or serve on the side\u2026<\/strong><\/p>\n<p><strong>Nothing more now but to Enjoy!!<\/strong><\/p>\n","protected":false},"excerpt":{"rendered":"<p>Est.
