\u2013 1hr rest<\/h1>\n<p>Looking for an <strong>end Internal temp<\/strong> of <strong>200-205f<\/strong><\/p>\n<p><strong>Covering Ribs completely<\/strong> in an <strong>even layer<\/strong> of <strong>Mustard<\/strong><\/p>\n<p><strong>Rub Ribs <\/strong>with Ground Rock Salt and \u00a0<strong>Australian Outback Coffee <\/strong>meat rub (Organic Coffee, garlic, chilies, sea salt, paprika, oregano, onion, sugar, cumin, celery seeds, sumac, wattle seed, allspice, pepper, thyme, rosemary) Until <strong>all exposed surfaces are covered<\/strong>, medium to heavy coat<\/p>\n<p>Place <strong>Ribs<\/strong> in <strong>Fridge uncovered for \u00bd hour&gt; in foil tray<\/strong><\/p>\n<p><strong>Smoke Ribs <\/strong>on<strong> Open Rack until bark is formed (Optional: After first hour and half, Spritz Ribs with Water\/Beef Stock, repeat every 30mins) smoke for around 3-4hrs <\/strong><\/p>\n<p><strong><u>Prepare Wrapping Mixture<\/u><\/strong><u>:<\/u><\/p>\n<p><strong>\u00bc<\/strong> Cup of packed <strong>Brown Sugar<\/strong><\/p>\n<p><strong>\u00bc<\/strong> Cup of <strong>Treacle<\/strong><\/p>\n<p><strong>\u00bd<\/strong> Cup <strong>Beef Stock<\/strong><\/p>\n<p><strong>1<\/strong> Tbsp. of <strong>Worcestershire sauce<\/strong><\/p>\n<p><strong>1<\/strong> Tbsp. of <strong>Apple juice<\/strong><\/p>\n<p><strong>\u00bd<\/strong> Tbsp. <strong>Butter<\/strong><\/p>\n<p>Bring <strong>Beef Stock to the boil<\/strong>, reduce heat<\/p>\n<p>Add <strong>Sugar, treacle, Worcestershire sauce, vinegar and butter, stir until sugar is dissolved<\/strong>, and Remove from Heat<\/p>\n<p>When Ribs are ready, have <strong>foil tray<\/strong> prepared, Add <strong>Ribs Meat side Down<\/strong><\/p>\n<p><strong>Pour<\/strong> <strong>Wrapping mixture over Ribs, Cover and Seal <\/strong>foil tight<\/p>\n<p><strong>Cook <\/strong>for a further <strong>1 hour <\/strong>or until Ribs <strong>reach an Internal temp of 200-205f<\/strong> or when tooth pick tender<\/p>\n<p>Remove from smoker and let Breath for 10mins to stop cooking process \u2013 <strong>Wrap tight in Heavy Foil, towel<\/strong>, and place in <strong>Foam Esky, Rest<\/strong> for<strong> 1hr or more<\/strong><\/p>\n","protected":false},"excerpt":{"rendered":"<p>Total hours 7.5hrs \u2013 6.5hrs cook&gt;
